It’s time for a Chef Benito recipe share! Strawberry Tomato Jam!
One of Chef’s favorite things to do on a cold day is create something delicious! Enjoy his wonderful strawberry tomato jam recipe and we encourage you to try it as he suggests, served over a slather of fresh ricotta on a toasted crostini!
Strawberry Tomato Jam
4 cups diced ripe roma tomatoes
1 1/2 cups chopped strawberries
1 cup sugar
1/8 teaspoon ground cinnamon
1/8 teaspoon kosher salt
1 teaspoon fresh lemon juice
Place the diced tomatoes in a medium saucepan over medium-high heat and bring to a boil. Reduce the heat to a simmer and stir in all other ingredients. Bring to a simmer and cook, stirring occasionally, until the mixture has thickened to the consistency of a loose jam, 30 to 40 minutes. Set aside to cool completely.
The flavor combination of strawberries and tomatoes pair perfectly with your favorite cheese. My favorite pairing is with fresh ricotta on toasted crostini.
